5 Minute Cauliflower Fried Rice

Lately, I have been trying to incorporate more and more low carb/high fiber meals into my diet (thanks to The Skinny Confidential’s podcast with Tanya Zukerbrot from F-Factor). With that, I have been eating more vegetables and less grains and have noticed quite a difference in my appearance and weight. Now don’t get me wrong, I will still indulge in a giant bowl of ramen or spaghetti on the weekend, but for the most part I have been trying to reduce my carb intake.

Over the past few months I have been researching what alternatives I can use in place of my normal carbs and one of my absolute favorites has been replacing rice with cauliflower “rice”. I now use it on a regular basis as a replacement and I hardly ever miss actual rice.

As much as I like cooking, I don’t want to spend all of my time doing it. I want quick, efficient, and delicious. That’s why I am SO thankful that you can now buy premade cauliflower rice at practically any grocery store. Not only that, but you can buy cauli rice with chopped veggies already mixed in for even quicker meal preps!

One of my favorite go-to meals has been cauliflower fried rice. I have made it from scratch, but lets be real for a quick lunch I don’t have time to chop up veggies and measure and all of that nonsense. I always want a filling low carb meal, but I can’t spend my whole afternoon cooking a meal.

Then I discovered Trader Joe’s Riced Cauliflower Stir Fry and my life changed. It’s the perfect mix of cauliflower & fried rice essentials including peas, corn, and scallions. With some time and experimenting I have created the most delicious cauliflower fried rice recipe that takes only 5 minutes to whip up. Trust me, you’re going to want to try this.

5 Minute Cauliflower Fried Rice – Serves 1

Ingredients:

1/2 Bag of Trader Joe’s Riced Cauliflower Stir Fry or similar (Green Giant also makes a good one)
1 Egg
1 TBS Low Sodium Soy Sauce
1 TBS Sesame Oil
1/4 teaspoon ground ginger
Cooking spray (I use organic olive oil spray from Simple Truth)

Red Chili Flakes & Sriracha to taste

Directions:
1. Spray a medium sized skillet with cooking spray and turn on to medium heat. Once it warms, add in the cauliflower rice mix.
2. As the stir fry is starting to cook, lightly spray a small frying pan with cooking spray and scramble the egg. Set aside.
3. Add in the low sodium soy sauce, sesame oil, ginger, & chili flakes to the cauliflower rice. Stir well.
4. Stir a few more times until fully heated through and liquid is absorbed into the cauliflower. If you want to add chili flakes for some spice, add them now.
5. Mix in the scrambled egg.

6. Serve immediately and top with as much Sriracha as your heart desires!
