Quick & Easy Avocado Egg Salad

This past year I have made a more conscious effort of having breakfast in the mornings. I will admit that I still skip it every now and then, but for the most part it has become an essential part of my morning routine. It helps me feel like I am on the right track for the rest of the day if I start it with a healthy meal.

That being said, I am NOT going to spend the majority of my morning cooking up some feast for me to eat before I work. I like to move slow in the mornings, enjoy my much-needed coffee & spend the first part of my morning making sure my house is picked up and chores are done for the rest of the day. If I were to make a fancy breakfast everyday, I would probably not start my work until noon (okay maybe that’s an exaggeration, but still).

This has caused me to be the master of a quick breakfast. I get sick of eating the same thing everyday, so I end up experimenting with ingredients I already have. I have never been an egg salad fan because if there is one food I hate it’s mayonnaise, and that’s what most egg salad consists of. The moment I heard that you can replace mayo with avocado, I began to turn a new leaf on my relationship with egg salad. That’s how I created the EASIEST ever avocado egg salad that anyone can make.

I make my avocado egg salad for one as my boyfriend typically isn’t up in time for breakfast, but this recipe is super simple to double up if needed. I wouldn’t make any extra  as the avocado will start to brown. This egg salad is good on it’s own, in a sandwich, or topped on whatever you like. I put mine on a few GG crackers for an extra serving of fiber in the mornings, but it would be amazing on some toasted sourdough bread for a twist on the classic avocado toast.

There is nothing better than a meal that takes minimal effort, but still tastes delicious. All you have to do for this avocado egg salad is toss all ingredients in a bowl and mash, mash, mash until desired consistency. Then eat it up and go about your day!

Quick & Easy Avocado Egg Salad – Serves 1

Ingredients:

1 Large Hardboiled Egg
1/4 Avocado
1/4 Lemon, Juiced (I like it really lemony. If you don’t, use less)
4-6 dashes of Red Chili Flakes (depending on how spicy you want)
4-6 dashes of Trader Joe’s Everything But The Bagel Seasoning (optional, but definitely recommended)
Salt & Pepper to taste

Directions:
1. Cut up hardboiled egg & avocado into small chunks
2. Add in lemon juice, red chili flakes, salt & pepper, and TJ’s Everything But The Bagel seasoning
3. Mash together until eggs and avocado are desired consistency
4. Serve immediately
